Bruschetta Trio – Tomato shaved fennel and crumbled feta cheese, smoked salmon with horseradish cream and capers, chicken liver pâté and candied orange peel. Salad greens, balsamic and herb dressing – TT$65 US$11
Roasted Sweet Pepper Mosaic with Herbed Goats’ Cheese – Roasted organic peppers. Goats’ cheese lightly flavoured with cracked spices and fresh garden herbs. Herb scented olive oil. Balsamic syrup – TT$55 US$9
Shrimp Bisque – Infusion of shrimp broth, wine, cream, sherry, island herbs and spices. Studded with shrimp meat, herb and garlic croutons, a swirl of cream, and a flurry of fresh snipped chives – TT$65 US$11
